Innovation & Technology

We have achieved to successfully combine the conventional methods of viticulture with technological procedures of “precision viticulture” having always in mind the outmost total respect to the environment.

We do not object to mild interventions in the wine, when they are essential and result in the improvement of quality. Nevertheless, our goal is to minimize them when the circumstances allow it.

Since its foundation, the estate has won the bet between the need for respect of tradition and the use of technology for the improvement of the wine quality. On the one hand, vineyard practices are mainly done manually by well-equipped staff that comprehends the different needs of each variety, while at the same time a transition is being made towards specific technological procedures of “precision viticulture”, through the use of technology (e.g. the use of drone for vineyard mapping, to maintain a more efficient control of the raw material in the vineyard.)

The oenological equipment is constantly renovated in order to improve the quality of the product, consisting of ultra modern cooling systems, cold-soaking tanks, close-type presses and a cutting-edge bottling unit, aiming at the least possible stress on grapes and wine. Moreover, we have a fully equipped laboratory, which has the ability to perform all the necessary analysis to ensure quality control during the production process. Being aware of the importance of the aging of wine, we continue to successfully experiment with the use of different aging vessels that include stainless tanks and french oak barrels, wooden tanks, clay amphorae and concrete wine eggs.

Our philosophy is that we do not object to mild interventions in the wine, when they are essential and result in the improvement of quality. Nevertheless, we aim at minimizing them when the circumstances allow it.

With respect to the environment and by taking measures towards minimizing the environmental footprint, we are in a transitional phase that aims at the integrated management of both cultivation and production in the near future, having technology as our ally in this endeavor.
